MOI MOI (NIGERIA)

2 cups bean (black eyed peas) flour (you can get this from an African store)Bobs Red Mill 19471 Garbanzo Bean Flour (Google Affiliate Ad)
3 cups hot water (not boiling)
8 tablespoons vegetable oil
3 boiled eggs (quatered) - optional
shrimps (optional)
tomato mix:
4 medium tomatoes
2 habanero (optional)
1 medium onion
3 maggi cubes 
1 teaspoon salt (optional)
3 tablespoons crayfish (optional)

 Items needed.
One large pot 32 qt. Stainless Steel Stock Pot With Lid - Stock Pots & Pressure (Google Affiliate Ad)
aluminium foil

Using the aluminium foil, make bags for the moi moi. cut up 8 pieces that are about 11 by 11 inches in size. Then fold the pieces such that there's only one opening. After you pour in the moi moi, close the open sideblend the tomato mix, pour into a bowl
mix the bean flour with the water until quite smooth. mix in the vegetable oil mix in the tomato mix Add about a quarter cup of the mix in each bag. Add one of piece of the quartered egg and one shrimp or as much or as little of the optional items as you like close the open side of the bag and place in a pot. when all bags are in, add water and boil on high heat for about an hour, checking to make sure there's enough water as you go remove from the bag and enjoy

How we met:

Bride says: He was a senior colleague in school, until I came across his friend 3years after he left school, in Lagos during my internship and I asked for his gsm number, then put a call to him, pretended I was someone else, but he recognized my voice. He then fixed a date for the following weekend at the e-center, yaba where we met.

Groom says: I knew her as a friend way back in pharmacy school in UniJos. We became friends after we found ourselves on the same seat on the way from a conference in Uyo. Little did I know that I was sitting with my future wife that faithful day. Not much happened after then till we met again when she came to Lagos for her internship. I received a call one afternoon from a lady who was trying to disguise her voice. To her biggest surprise I recognized her voice and fixed a date for the next weekend at e-center and when I saw her coming I said to her ‘’here comes my wife’’ 

How he proposed: wow I remember that day with nostalgia. It was on my last birthday, 16 sept 2011, I came in from Yobe to Lagos during my NYSC, and he then organized a birthday party for me at the VIP Lounge of King-size, Oregun. I was treated as a princess by him and our friends. At the end of the day while he was giving the vote of thanks, I saw my dear on his knees with a gold ring and he turned to me and said, ‘please marry me’. I was shocked, surprised, and shy because he didn’t strike me like someone who would propose in the presence of friends in a public place.
